A healthy roasted red pepper hummus that’s packed with flavour and rich in fibre, plant protein and healthy fats. Ingredients
1 x 400g tin of chickpeas
3 roasted red peppers
1 clove of garlic
2 tbsp of tahini or nut butter
½ tsp of salt
1 tbsp of olive oil
½ tsp cumin
Pinch of smoked paprika
Method
Combine all the ingredients in a food processor.
Blitz to your desired consistency.
Keep in the fridge in an air-tight container for up to 4 days
Variations
Adjust the seasoning to suit your taste.
Use tahini or any nut butter depending on your preference.
Add lemon juice for an extra zing.
You can roast your own red peppers, or use peppers from a jar to save time. If using roasted peppers from a jar, check the ingredients list and opt for one with no added sugar.
