These energy balls are naturally sweetened with dates and packed with nuts, oats and cacao, making them a nutritious snack or healthier dessert. They’re a good source of protein without the need for protein powder and take just 10 minutes to prepare. There’s no baking required, but you’ll need to chill them overnight before they’re ready to enjoy. This recipe makes 12 balls, but the quantities can easily be adjusted to suit.
Ingredients
- 70 grams almonds
- 60g walnuts
- 80g rolled oats
- 2 tbsp cacao powder
- ¼ tsp salt
- 140g dates
- 2-3 tbsp water
Method
- Add the almonds, walnuts, rolled oats, cacao powder and salt to a food processor. Blitz until combined but still slightly textured.
- Roughly chop the dates and add them to the food processor along with 1 tablespoon of water. Blitz until the mixture starts to come together. If it is too crumbly, add another tablespoon of water and blitz again. Add the remaining tablespoon of water if needed — the mixture should hold together when pressed.
- Divide the mixture into 12 equal portions and roll into balls, slightly smaller than a golf ball.
- Place the balls on a sheet of baking paper and chill in the fridge overnight.
- Store in an airtight container in the fridge, or freeze for longer-term storage.
