Chocolate Chia Pudding

This chocolate chia pudding is proof that healthy desserts can still feel indulgent. Made with just a handful of ingredients, it develops a thick, creamy texture overnight and is delicious topped with fresh berries and a sprinkling of chocolate shavings. At only around 130 calories per serving (before toppings), it’s a simple way to enjoy a satisfying treat.

Ingredients

60g chia seeds

400ml unsweetened almond milk

3 tbsp cacao powder

1-2 tbsp maple syrup

½ tsp vanilla extract

Pinch of salt

To garnish

Fresh or frozen berries

Chocolate shavings

Method

  1. Add the chia seeds, almond milk, cacao powder, maple syrup, vanilla extract and a pinch of salt to a bowl. Whisk well until the cacao is fully incorporated.
  2. Leave the mixture to stand for 5–10 minutes, then whisk again to break up any clumps of chia seeds.
  3. Cover the bowl and refrigerate overnight (or for at least 8 hours). Alternatively, divide the mixture evenly between 4 serving glasses or jars before chilling if you have enough space in your fridge.
  4. Before serving, give the pudding a quick stir if needed. Top with fresh or frozen berries and a few chocolate shavings.
