This chocolate chia pudding is proof that healthy desserts can still feel indulgent. Made with just a handful of ingredients, it develops a thick, creamy texture overnight and is delicious topped with fresh berries and a sprinkling of chocolate shavings. At only around 130 calories per serving (before toppings), it’s a simple way to enjoy a satisfying treat.
Ingredients
60g chia seeds
400ml unsweetened almond milk
3 tbsp cacao powder
1-2 tbsp maple syrup
½ tsp vanilla extract
Pinch of salt
To garnish
Fresh or frozen berries
Chocolate shavings
Method
- Add the chia seeds, almond milk, cacao powder, maple syrup, vanilla extract and a pinch of salt to a bowl. Whisk well until the cacao is fully incorporated.
- Leave the mixture to stand for 5–10 minutes, then whisk again to break up any clumps of chia seeds.
- Cover the bowl and refrigerate overnight (or for at least 8 hours). Alternatively, divide the mixture evenly between 4 serving glasses or jars before chilling if you have enough space in your fridge.
- Before serving, give the pudding a quick stir if needed. Top with fresh or frozen berries and a few chocolate shavings.
