These no-bake chocolate peanut butter bars are rich, satisfying and incredibly easy to make. Naturally sweetened with dates and topped with a smooth layer of dark chocolate, they’re packed with wholesome ingredients including oats and nuts for added texture and crunch.
Ingredients
130g dates
250g peanut butter
45g rolled oats
60g peanuts or pistachios
130g dark chocolate (70% cocoa)
Method
- Soak the dates in boiling water for 20 minutes, or until softened. Drain well before using.
- Line an 8 x 8-inch (20 x 20cm) baking tin with baking paper.
- Add the softened dates, peanut butter and rolled oats to a food processor. Blitz until the mixture comes together into a thick paste.
- Transfer the mixture to a bowl and stir through the chopped peanuts or pistachios until evenly combined.
- Press the mixture firmly into the prepared tin, using the back of a spoon or spatula to smooth the surface and press it into the corners.
- Melt the dark chocolate in the microwave in 20-second bursts, stirring between each burst, or melt it in a heatproof bowl set over a pan of gently simmering water.
- Pour the melted chocolate over the base and spread it evenly with the back of a spoon or an offset spatula.
- Refrigerate for at least 1 hour, or until the chocolate has fully set.
- Remove the slab from the tin and cut into 12–16 bars. Store in an airtight container in the fridge for up to a week.
