Crispy, savoury and packed with flavour, these Edamame Bean Pops make a quick and nutritious snack. Frozen edamame beans are tossed with lemon zest, black pepper and Parmesan for a simple combination that’s ready in minutes.
Edamame are young green soybeans, harvested before the beans fully mature. They’re usually sold frozen, either in their pods or as loose beans, and are a great source of plant-based protein, fibre, folate and iron.
Ingredients
- 200g frozen edamame beans
- 1 tsp olive oil
- Zest of 2 lemons
- ½–1 tsp black pepper
- 25g Parmesan cheese
Method
- Cook the edamame beans in a pan of salted boiling water for 2–3 minutes, or until just tender. Drain well.
- Heat the olive oil in a frying pan over a medium heat. Add the lemon zest, black pepper and cooked edamame beans.
- Toss the edamame in the pan for 2–3 minutes, until heated through and lightly golden.
- Remove from the heat and sprinkle over the Parmesan. Toss briefly to combine.
- Serve straight away, or allow to cool and store in an airtight container in the fridge for up to 3 days.
