These Frozen Yogurt Oat Cups are the perfect healthy treat for warmer days. Made with a chewy oat and almond butter base, creamy Greek yogurt and your favourite toppings, they’re simple to prepare, naturally sweetened with honey and ideal for keeping in the freezer whenever you fancy a refreshing snack. They’re great for kids and adults alike and can easily be customised with different fruits, nuts or chocolate.
Ingredients
75g rolled oats
70g almond butter
65g honey
1 tsp vanilla
240g plain Greek yogurt
Toppings used:
100g berries
50g dark chocolate drops
Method
- Put 12 silicon cupcake cases in a muffin tin
- Gently warm the almond butter and honey until they can be stirred together easily.
- In a bowl, combine the rolled oats, warmed almond butter and honey, and vanilla.
- Divide the mixture between the 12 cases and press it down firmly to form the base of each cup. The back of a spoon or your fingertips work well for this.
- Spoon the Greek yogurt evenly over each oat base.
- Press your chosen toppings, such as berries or dark chocolate drops, gently into the yogurt.
- Freeze for at least 4 hours, or overnight, until completely firm..
- Remove the frozen yogurt cups from the muffin tray and store them in an airtight container, separating layers with baking paper.
To serve
Allow the cups to sit at room temperature for 15–20 minutes before eating for the best texture. Alternatively, transfer one to the fridge in the morning so it’s ready to enjoy at lunchtime—it will be softer and may be easiest to eat with a spoon.
Variations
Experiment with different toppings such as fruit, nuts, seeds or different chocolates.
- Try sliced strawberries, raspberries, blueberries or mango.
- Add chopped nuts, seeds or a sprinkle of granola for extra crunch.
- Swap dark chocolate for white or milk chocolate, or drizzle with melted chocolate before freezing.
- Stir a little cinnamon or lemon zest into the yogurt for extra flavour.
