These homemade granola bars are packed with wholesome ingredients, including dates, oats, almonds, pistachios, and nut butter. Naturally sweetened and requiring no baking, they’re perfect for a quick breakfast, lunchbox treat, or healthy snack on the go.
Ingredients
220g dates
50g honey
100g nut butter
50g pistachios
60g almonds
135g rolled oats
Makes approx 12-14 bars
Method
Chop the pistachios and almonds to desired size
Blitz the pitted dates until they form a ball
Melt the nut butter and honey
In a bowl, combine the rolled oats, melted nut butter and honey and the chopped nuts (pistachios and almonds)
Mix – it takes a bit of time.
Line an 8×8 tin with baking paper and pour the mixture in
Fill the tin including the corners. You may need to use your fingers as the back of a spoon seems to just lift the mixture
Put another piece of baking paper on top of the mixture
Using the bottom of a glass, or a rolling pin, press down firmly to even out the mixture (do this a few times all over)
Put the tin in the freezer for 20 minutes
When out the freezer, chop into 12-14 slices.
Variations
You can use different nuts and nut butter for preference but pick good quality (just nuts, no extra ingredients)
You can add in other things for taste such as chocolate chips or vanilla if you like it sweeter
To make vegan, you ca use maple syrup instead of honey
Getting them to stick is the difficult part so use the correct size tin and take time pressing the mixture together. And if it doesn’t stick, it still makes a delicious healthy snack you can fit in a pot for on the go
